Uncle Dario’s Cheesecake Recipe

This recipe is from my Uncle Dario. He was born and raised in New Jersey and loved to bake and cook. When he retired, he decided he wanted to make his own cheesecake recipe from scratch. So, he experimented for awhile making cheesecake after cheesecake until he finally came up with this recipe. It is my favorite cheesecake and I want to share it with you. I hope you enjoy it as much as I do.


Graham Cracker Crust:

  • 1 and 1/2 cups graham crackers
  • 4-5 tablespoons of melted margarine
  • 1/4 cup of sugar
  • 1 teaspoon of vanilla

Cheesecake Filling:

  • 3 packs of 8  oz cream cheese
  • 1 cup of sugar
  • 2 teaspoons of vanilla
  • 3 eggs (add one egg at a time when mixing)
  • 1 can of eagle brand sweet and condensed milk
  • 2 tsp of lemon or almond (whatever flavor you want)
  • 2 Tablespoons of flour


  1. Mix crust ingredients
  2. Get a normal size spring form pan and line the bottom with parchment paper
  3. After mixing graham cracker crust, put in the spring form pan on top of parchment paper
  4. Mix filling ingredients
  5. Pour over crust
  6. Pre-heat oven to 325 degrees
  7. While pre-heating, place a pan of water on the bottom shelf for moisture
  8. Once pre-heated, put cheesecake in the oven and let bake for 45 minutes
  9. After 45 minutes, crack the oven door (I usually put an oven mit in the door to keep it open)
  10. Bake for an additional 5 minutes.
  11. Let cool on a cooling rack until room temp, then refrigerate overnight.
