Perogie Casserole

For those of you that practice Lenten season, here is a recipe that you can try for yourself. If you get tired of eating fish on Fridays, you can make this at home and give your taste buds a break from all the seafood. We hope you enjoy!

Ingredients:

  • 1 stick of butter (melted)
  • 1 large onion (caramelized)
  • 8 oz lasagna noodles (cooked and drained)
  • 8 potatoes (mashed)
  • 1 pound of cheddar cheese (add cheese to mashed potatoes)
  • grated Parmesan

Instructions:

  • Get a 9×13 pan and grease it
  • Layer 1: Noodles
  • Layer 2: Half of the mashed potatoes
  • Layer 3: Noodles
  • Layer 4: Rest of mashed potatoes, onions and butter
  • Layer 5: Rest of Noodles
  • Top with some grated Parmesan and some cheddar cheese
  • Bake at 350 degrees for approximately 45 minutes or until cooked through
